I started with heating up olive oil in a large pan and then spice it with 1 tbsp cumin and 1tsp termeric.
I then throw in some crushed garlic and one chopped red onion.
When the onion is soft i add 1kg carrots, half a butternut squash and two apples to the spice mix and let it heat up.
I later add 1l stock to it and let it boil up. When it starts boiling, I put it on low heat and let it do it's magic for 20 minutes.
When the vegetables are soft, I spice it with salt and pepper before blending it and tadaaaaa! I got myself a soup! :)
