Ratatouille

Once again, the weather has been awesome. Today it has been 29 degrees. Amazing, right? Ice cream on a day like this was a must. I even swam in the ocean today and I've been walking around in my new bathing suit ever since. My mum and I decided to get the BBQ going and have dinner on our terrasse. While she fixed the meat and the potatoes, I decided to make ratatouille to go with. A French vegetable dish. Delicious! It was my first time making it and it couldn't have gone better. Yummy! is all I have to say about it. I recommend ya'll making some at home :)
The ingredients
First cook peppers and a large onion in oil in a saute. Cover in herbs de provence, salt and pepper. When the peppers are soft, add the cut tomatoes and let it stimmer for some time

Fry the zuccini in olive oil and cover it with some more herbs, then do the same with the aubergine
When the vegetables are soft, mix zuccini and aubergines in the tomatoes/pepper thing and pour some salt and pepper on top of it. Let it stimmer for about ten minutes before mixing it with some basil
and wallah, there you have it! Dinner is served once the meat and the potatoes are done too :)
